Frankfurt 1838

A French Patisseur by the name of Jean Jacques Gautenier who was working for the wealthy Bethmann family in 1838 came up with an idea one day. For the many guests that came to visit the Bethmann family, the Patisseur wanted to offer something very special. He started making little balls made of marzipan and decorated them with four half almonds, each half symbolized one of the four Bethmann sons. After the death of son Heinrich, the Bethmännchen were then made with only three half almonds.

What is marzipan?
It is an almond paste with added sugar and rose-water, which is mainly used in Turkey.
